Pressure Cooker BBQ Spare Ribs

Ingredients

700g spare ribs or pork belly slices
250 ml beef stock
Salt & pepper
BBQ sauce (see here)

Method

Separate the spare ribs into individual pieces so they will all fit in the pressure cooker. Sprinkle them on both sides with salt and pepper then sear them in a lightly oiled hot pan.
Pour the beef stock into the pressure cooker and put the ribs on a steamer rack. Rather than stacking sections of ribs, place them on end and curl them around the pot so the pieces aren’t touching to ensure even cooking.
Bring to high pressure and cook for 20 minutes or more to ensure tender ribs.
They can now be barbecued (or oven cooked at 220C fan) for a few minutes for crispness and flavour or brushed with some BBQ sauce first (a sugar based sauce will produce blackened ribs)
Serve with the BBQ sauce as a dip
